Skewers of fried tortellini with cream sauce and parmesan.

Egg 1

Vegetable broth 1,5 l

medium sized tortellini 36

Bread crumbs 100 gr

Grated Parmesan cheese 100 gr

Fresh double cream 250 ml

Nutmeg q.b.

Salt q.b.

Black pepper q.b.

Milk 100 gr

Preparation method

In a large sauce pan, boil the the tortellini pasta. Drain and place them to cool on a plate, each well separated to pre-vent them from stick together. In a saucepan, heat the double cream over low heat. Add the milk and bring gently to boil. Add the parmesan cheese and whisk well to melt it in. - Season with nutmeg and freshly ground black pepper to taste. Keep stirring until the mix is dense. Season with salt to taste.
